TORRONS VICENS Botiga, fábrica i museu artesà de gormanteries.

Nougat History. Producing with the same ingredients and process as traditionally. The nougat
Agramunt
tradition of the town of Agramunt dates back to the year 1741, when it was first documented
through letters of noble families of the region. The Agramuntnougat achieved a great recognition during the 19th and 20th centuries, largely due to the visits that the creators of the nougats made to festivals and markets in other regions. Later, the trade suffered the consequences of the civil war and for many years its production was halted due to problems supplying main ingredients such as hazelnut. After this period only a few families continued with the tradition until now. Currently, the Vicens Torrons is still being produced with the same ingredients and process as traditionally. Its reputation as a product of supreme quality has lead to several official award recognitions such as the ‘Denominación Genérica de calidad’ and the ‘Indicación Geográfica protegida’ to name but a few. Nougat Elaboration: Defying the passing of time The recipe of the Vicens Torrons has been passed down from father to son with meticulous loyalty to the tradition since 1745. Defying the passing of time, loyal to the tradition, we have turned this legacy of ours into a modern and respectful business. The Agramunt Torrons that we produce in our work-place is the product of a careful mix of hazelnuts or almonds with sugar, honey, egg white and wafer: Caramelising the sugar... We start by caramelising the sugar. Once the sugar is melted we add the honey, this is the most delicate part of the procedure. For this process, we select the finest ingredients of the best quality. Egg & Hazelnuts... We beat the egg whites until stuff and then add them to the mixture of honey and sugar when it is at boiling point. We then take it off the heat and add the hazelnuts. The hazelnuts are another of the vital ingredients and therefore it is essential that they are of first-class quality. We select the best, and roast and then peel them. The Cooking Paddle... The experts then knead the mixture with a cooking paddle until amalgamated. Before it cools down, we make them into small pieces and mould them into the traditional shape. The Nougat... Finally, we put each piece between two wafers. In this way we achieve the nougat with a crunchy texture that breaks almost effortlessly. The result is a delicious, smooth sweetness. www.vicens.com
